<li>Clean and scale fish, leaving      the head on.</li>
<li>Wipe inside fish with kitchen      paper dipped in coarse salt, leaving body cavities clean.</li>
<li>Snip out gills with kitchen      scissors and trim any long spines or fins neatly.</li>
<li>Wash fish well, cut diagonal      slashes in flesh with sharp knife, about 2.5 cm (1 inch) apart, and rub      fish with<br />
a little lemon juice, salt, turmeric and pepper.</li>
<li>Put remaining ingredients into      container of electric blender and blend to a smooth paste (or use a mortar      and pestle).</li>
<li>Apply to fish, rubbing well      into slashes and body cavity.</li>
<li>Spoon remaining mixture over      fish.</li>
<li>Wrap in leaves or heavy-duty      foil and make a neat parcel.</li>
<li>Put over glowing coals or under      a heated griller for 10 minutes on each side.</li>
<li>Open parcel for last few      minutes to allow excess moisture to evaporate.</li>
<li>Serve with steamed rice.</li>

<li>Cut the squid hoods into 6 cm      squares and score a crisscross pattern lightly into the flesh with a small      sharp knife.</li>
<li>Scrub the mussels and remove      the beards.</li>
<li>Heat the oil in a large      heavy-based pan or wok, add the onion, garlic and ginger, and cook over      medium heat for 3 to 5 minutes or until the onion is soft.</li>
<li>Add the turmeric, chili powder      and paprika, and cook for 2 minutes or until the oil begins to separate      from the spices.</li>
<li>Add the seafood to the pan and      cook over high heat for 3 to 5 minutes or until the shrimps are pink.</li>
<li>Stir in the tomato puree and      sugar and stir-fry for 3 minutes or until the sauce is heated through.</li>
<li>Serve with rice or noodles.</li>

<ul style="text-align:justify;">
<li>Wash fish steaks, dry on kitchen paper and rub each steak well with a mixture of pepper, salt and turmeric.</li>
<li>Heat about 1/2 inch (1.75 cm) oil in a large frying pan and fry fish quickly to a golden color.</li>
<li>Drain on paper while preparing the gravy.</li>
<li>Heat 2 tablespoons oil in a large saucepan and gently fry onions, fenugreek, garlic and ginger until onions are soft and golden.</li>
<li>Add cinnamon, pandan, curry leaves and curry powder and fry for 2 minutes, stirring.</li>
<li>Add tamarind liquid and coconut milk and simmer, uncovered, until gravy is thickened and slightly reduced.</li>
<li>Put in the fish steaks.</li>
<li>If they are very large, divide into serving pieces.</li>
<li>Spoon gravy over the fish and simmer for about 10 minutes.</li>
<li>Serve hot with boiled rice and vegetable curries.</li>

It has a hard shell on the outside that can be quite colorful on the top with shades of red and orange. It is believed that the colors of it will change throughout the course of each turtle’s life.</ins></p>
<p><strong><ins>Distribution</ins></strong></p>
<p><ins>You will find the Green Sea Turtle out there in the tropical and subtropical regions. Hawaii has one of the largest populations of them in the world. Other locations where they have been identified include Australia, Mexico, India, and Asia.</ins></p>
<p><strong><ins>Behavior</ins></strong></p>
<p><ins>They love to crawl up on the shore of the beach and spend time soaking up the sunlight. . They are deep divers too but have to come up every four or five minutes for air. Some wonder how it is that Green Sea Turtles down then? Generally it has to do with stress because at that point their natural mechanism to hold on to oxygen in the body doesn’t function properly.</ins></p>
<p><strong><ins>Diet /Feeding</ins></strong></p>
<p><ins>It is common for a Green Sea Turtle to migrate thousands of miles in search of food and nesting grounds. The eating habits of this turtle are quite interesting. As new hatchlings entering the water they are meat eaters. When they are about <span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount">3</span></span> years of age though they change to being vegetarians so they won’t be eating any type of meat in the water. They consume algae and sea grass which isn’t very filling so they consume large amounts of it every day.</ins></p>
<p><strong><ins>Reproduction</ins></strong></p>
<p><ins>Males will return to the location where they were born annually for the mating process. Even if this means they have to travel long distances. The females may have several breeding grounds that the go to so they don’t always end up in the same place every year. It is believed that the female Green Sea Turtle only mates every 2 to 4 years instead of annually.</ins></p>
<p><ins>The females dig nests in the sand to deposit their eggs in. <p><strong><ins>Human Interaction</ins></strong></p>
<p><ins>In spite of conservation efforts to protect their natural habitat, they continue to be killed for their meat. They are also killed for their skin as it has many uses. The eggs of the Olive Ridley Sea Turtle often get taken by people to consume as well. In many locations they end up in fishing nets that are meant to capture other types of aquatic life. Yet many of them suffer injuries or they die while in those nets.</ins></p>

Learning to dive down into the tank to take the food. When they an do this. They can be safely released into the sea where they can fish for themselves on the coral reefs. Turtles are frequently injured at sea. Many get caught in fishing nets. Others are attacked by people attempting to catch and kill them for their meat. Surviving turtles are cared for by the Turtle Farm and those who make a good recovery can be re-released back the sea.  The Turtle Farm encourages local people to bring eggs or turtles to them by making a payment for them. This helps to conserve turtle stocks and persuade people to stop selling and eating turtles or their eggs.</p>

To reduce the effects to the ecosystem, the reef was declared a national park on September 19, 2002.</p>
<p><strong>Coral reef</strong></p>

The coral reef reduces the coastal erosion and forms a natural breakwater. The coast of the national park extends four km. Generally the coast is narrow, ranging from 5-50 m according to the climatic conditions of the year. Scuba diving is a popular recreation here.</p>

The rain is received in both southewestern and northeastern monsoon seasons, in April-June and September-November respectively. Inter-monsoon season is a dry period which is considered the best season to visit the park. The temperature of the water ranges from28.0°-30.0°C while the mean annual temperature is 27°C of the atmosphere.</p>
<p><strong>Flora and fauna</strong></p>
<p>Foliaceous Montipora species dominate the coral reef. Encrusting and branching species are also present. Faviidae and Poritidae corals are contained in the inshore areas of the reef in massive colonies. Staghorn, elkhorn, cabbage, brain, table and star corals are all present in the reef. <p>Seagrass and marine algae belonging to genera Halimeda and Caulerpa are common in the seabed depth ranging from 5-10 m. Seagrasses provide habitat to Dugong and sea turtles. Some species of prawns feed on the seagrass. Eight species of ornamental fishes also inhabit the reef, along with many vertebrates and invertebrates including crabs, prawns, shrimps, oysters and sea worms. Porites desilveri is an endemic coral species of Sri Lanka. Chlorurus rhakoura and Pomacentrus proteus are two reef fish species confined to Sri Lanka. Blacktip reef shark are found along the outer slope of the reef. Three sea turtles which have been categorized threatened visit the coral reef: the hawksbill turtle, green turtle, and Olive Ridley.</p>

<p>The reef has suffered high degradation due to both natural and human activities. Despite being designated as a protected area, the coral reef has been subject to constant exploitation including removal of breeding ornamental fish for the commercial market.</p>
<p><strong>Boxing day tsunami</strong></p>
<p>The two marine national parks of Sri Lanka, Hikkaduwa and Pigeon Island, received little direct impact from the Boxing day tsunami. However they suffered from secondary impacts, particularly from terrestrial debris being deposited on the reefs. A collaboration work of conservation groups and volunteers was carried out to clean up the beach and the reef debris, including two large fishing nets stuck on the outer edge of the reef.</p>

Hikkaduwa is a small town on the south coast of Sri Lanka. Hikkaduwa is famous for its beach and corals.</p>
<p style="text-align:justify;">The place is on the way from Colombo to Galle on the famous Galle road. It is primarily a tourist destination, and serves as a great beach with options to surf, snorkel and enjoy the sun.</p>
<p>The town is arranged around the one main road which runs from Galle to Colombo. This road is extremely well trafficked and pedestrians and tourists are advised to exercise caution when crossing.</p>
<p style="text-align:justify;">The town has a plethora of tailors who will custom make shirts, pants, and shorts.</p>
<p style="text-align:justify;">The area also has a reputation for offering a vibrant nightlife. Hikkaduwa is also very popular with board-surfers. It&#8217;s a well-known international destination for board-surfing.</p>

<p style="text-align:justify;">Hikkaduwa appears to have been an early tourist destination in Ceylon, for J. W. Bennett reported in <span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount">1843</span></span></span></span></span></span> that it “is most pleasantly situated, and a great resort of picnic parties from Galle”. Traditionally associated with the cultivation of coconuts, rice and cinnamon, plumbago mining, and the manufacture of lace and drum frames, Hikkaduwa has emerged as a modern destination for sun-seekers and wave-worshippers.</p>

<p>There is only one town by the sea that can boast of some of the best surfing waves in Sri Lanka, a long stretch of beach packed with restaurants serving deliciously fresh seafood, an equally long stretch of souvenir shops for the serious shopper, and guesthouses and hotels galore, from the cheap and cheerful to star-class. The name of the place is Hikkaduwa, and there is no other resort on the island like it.</p>
<p style="text-align:justify;">Lying <span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount">98</span></span></span></span></span></span>km south of Colombo on the west coast, Hikkaduwa comprises a number of different areas stretching from north to south. The main town of Hikkaduwa is the most ‘Sri Lankan’ of all areas and features the bus stand, train station and police station at one end, and the dive stations and big hotels at the other end, further south. Next is the Wewala area packed full of guesthouses and small restaurants, internet cafés and bars. Finally, a little further to the south is Narigama, which is a little quieter but has numerous guesthouses, plus the closest thing to a night club – Top Secret. What makes Hikkaduwa stand out from other resorts is the range of accommodation and shopping and dining options, unlike Bentota and Beruwala, which feature only big star-class hotels.</p>

New tourist-orientated establishments sprang up, such as Cool Spot, which is the oldest restaurant in town, having opened its doors in <span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount">1972</span></span></span></span></span></span>. The Germans were the biggest influence for a long time, and although today many signboards and menus are still in German, the clientele is now much more international. In particular, the number of Australians is rising as the fame of Hikkaduwa as a surfer’s destination grows.</p>
<p>For those interested in the sea, it is at its best for diving and snorkelling from November to March when the visibility is generally good. Hikkaduwa’s Coral Sanctuary, established in <span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount">1988</span></span></span></span></span></span>, ensures the underwater world is accessible to all whether they can dive or not.</p>
<p style="text-align:justify;">
<p style="text-align:justify;">Should you want to see more of the Sri Lankan marine life than is in the sanctuary you will need to be a PADI qualified diver, or be willing to take your PADI course there and then. Although there are a number of dive stations, I would recommend Dive Sites Lanka because of their excellent new equipment, the and their responsible attitude to diving. With a number of sunken wrecks and reef gardens further out to sea, it is well worth discovering some of what underwater Sri Lanka has to offer.</p>
<p>Finally, there are of course those attracted to Hikkaduwa by the surfing, which is thought to be second only to that at Arugam Bay on the east coast.</p>
<p>Every November for the past five years the National Championship of the Japanese Pro Surfers’ Association has been held in Hikkaduwa and this year over <span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount"><span class="currency_converter_link" title="Convert this amount">100</span></span></span></span></span></span> Japanese surfers participated. The waves are good and the atmosphere relaxed, so head down to Wewala with your board.</p>
<p style="text-align:justify;">Once you have washed the sand out of your hair it is time to do some shopping. Follow the Galle Road as it cuts through the town. Hikkaduwa comes into its own as the premier shopping destination for the backpacker. Clothes are tailored here to western tastes and in western sizes. Jewellery is not of the gaudy golden type, but the more understated silver type with beautiful semi-precious stones. There are dozens of souvenir shops with items from masks and puppets, to shells and corals, and from musical instruments to batiks and paintings. Do, however, be prepared to bargain – especially in the high season.</p>
<p style="text-align:justify;">Hikkaduwa by night means food, drink and dance. There is a wide choice of restaurants, offering excellent fresh seafood, lots of other travellers to meet and talk to, and menus that go far beyond rice and curry. If seafood is not your thing, then the excellent Restaurant Refresh has an amazing array of food and a stylish interior. Much less pricey is the wonderfully aromatic Rotty Restaurant. It is hard not to resist the freshly cooked “short eats” (snacks) if you feel like Sri Lankan tastes, or cheese, onion and tomato rotties for those missing western food. I dare you to leave without sampling the banana and chocolate rotties!</p>
<p>The dance floor at Top Secret is actually not much of a secret at all and attracts most of the night-time action with people from all walks of life strutting their stuff on the beach to pumping music that includes Bob Marley classics in the time-honoured beach tradition. Leave your inhibitions at home and enjoy the friendly atmosphere and cold beers!</p>
<p>In conclusion, Hikkaduwa is the kind of laid-back place that tourists tend to fall in love with. It has all the amenities, no serious hassles, and can offer the perfect beach experience for those who just want to laze, swim, surf and shop through their holiday.</p>
